From Home Cooking to a Future in Fine Dining
For Charlee Dailey, a Certificate III in Commercial Cookery(SIT30821 student, a career in cookery began long before she ever stepped into a commercial kitchen. As the oldest sibling in a food-loving family, she grew up surrounded by home-cooked meals, helping out in the kitchen and discovering a love for cooking from an early age. Those early experiences sparked a passion for food that eventually led her into the world of hospitality.
Through a cooking program at her local high school, Charlee discovered a pathway into the industry and later earned a scholarship to study at GOTAFE. That opportunity opened the door to an apprenticeship and the start of a career she continues to build today.
Charlee has learned that success isn't about getting everything right the first time.
"You're always going to have ups and downs, but there's always someone there to help pick you back up. Whether it's your friends, trainers, chefs or employers, there's always support when you need it."
Charlee credits her trainers for helping her develop both her skills and confidence in the kitchen.
"They all bring different experiences and teaching styles, which means you're constantly learning something new. They've pushed me to achieve more than I thought I could."
As a hands-on learner, Charlee enjoys the practical nature of the course and the opportunity to work with industry-standard equipment in GOTAFE's training kitchens.
"You learn by doing. If something doesn't work, you try again. That's the fun of it. It's much easier to understand concepts when you're actually putting them into practice."

Looking ahead, Charlee hopes to pursue a career as a fine dining chef, where attention to detail and precision are essential.
"I've always loved the small details, especially food presentation. I want to work in an environment where everything has to be perfect."
For anyone thinking about taking the leap into cookery, Charlee offers this encouragement:
"If you're thinking about doing this course, do it. Jump in the deep end. You're never going to learn if you don't. I was terrified when I started and worried I'd fail but taking that leap was one of the best decisions I've ever made. I've learned so much, gained confidence and made some amazing friends along the way."
